Kale can be eaten in so many ways but it is important to pick the right one! 
Quick tip - if you are going to add kale to a salad raw go for 'Dinosaur Kale' it has dark blue-green leaves and has a slightly sweeter, more delicate taste than curly kale.

As promised here is one of many kale inclusive recipes..


Paleo Friendly Kale and Bacon Frittata


Ingredients:

  • 6-8 eggs whisked
  • 4 slices of thick, good quality bacon
  • ½ bunch of kale - any type because you are cooking it
  • ¼ cup chopped white onion
  • Pepper

Method:

  1. Bring the pan to a temp of medium-high.
  2. While that’s heating, slice the bacon, dice onion and chop the kale into 2″ pieces
  3. Add the bacon to the hot pan by itself
  4. When bacon is nearly done, toss in the kale and onion - Be sure to mix often… you don’t want to walk away from the stove.
  5. The bacon will finish, the kale will wilt and the onion will soften. When you’ve reached that stage, pour in the whisked eggs and gently move the ingredients around to evenly distribute.
  6. Reduce the heat to low, cover the pan - Let this sit for maybe 3-4 minutes.
  7. When the edges are firm and have pulled away from the side of the pan, it’s ready to transfer to the oven. Turn your grill onto high, place the frittata under it for 3-4 minutes.
  8. When the eggs have set, especially around the meat and veggies, and have taken on some colour, the frittata is done cooking. Remove from the oven, place back on the stove top (off the heat) and re-cover. Let it sit for a minute or two to rest, which will make it easier to remove from the pan.
